Maple Syrup Custard with Berry Compote

This simple yet spectacular dessert is pure, old fashioned comfort. Serve alongside antioxidant-rich berry compote for a moment of magical indulgence.


  • 6 eggs
  • 3 cups full cream milk
  • 1 vanilla bean, seeds removed
  • ½ cup maple syrup

Berry compote


Step 1.
To make the compote, place berries, a dash of water, acai powder and maple syrup in a small saucepan. Bring to a gentle simmer until berries start to breakdown. Set aside.

Step 2.
Preheat the oven to 180C. In a bowl whisk the eggs and milk. Add vanilla and maple syrup.

Step 3.
Pour egg mixture into 4-6 small ramekins and place in a water bath. Fill water 2/3 of the way up the side of the ramekins.

Step 4.
Bake in the oven for 20-25 minutes or until set. Serve topped with berry compote.
